For this recipe you need cooked beans and the shelled corn.
Wash the quinoa several times (at least three times) with plenty of water and drain.
Boil the quinoa in a pot filled with water. Keep in mind that you will use 2 times the amount of liquid for 1 serving of quinoa.
Boil for 15 minutes or until done, and the water has been absorbed.
Simultaneously, shell the corn and boil for 12 minutes in another small pot.
Chop the cilantro and parsley.
For the dressing: Mix lemon juice with olive oil, parsley and cilantro. Season to taste with salt and pepper and, if desired, add a pinch of cumin.
In a bowl place the quinoa, beans, corn and mix with the dressing. Serve.
