Wash and slice the mushrooms. Chop the garlic.
Wash and dry the spinach leaves. Cut into strips.
Heat a pan over medium heat. Once heated, pour the oil, spread and add the mushrooms with the garlic.
Add salt and pepper and stir-fry for 5 minutes. Next, add the spinach and stir-fry for 1-2 more minutes. Set aside.
Put the cheese on a tortilla and fill with the prepared mixture. Cover with the other tortilla.
Warm both sides of the tortilla over medium-low heat until they are browned, and the cheese is melted.
Remove from heat, cut and serve.
