Heat 1/3 of the oil in a grill or pan over medium-high heat. While heating, season the chicken breast with salt and pepper.
Once heated, add to the pan and cook over medium heat for 4-6 minutes per side.
Remove when done and slice.
Meanwhile, wash and dry the spinach leaves. Separately, dice the cucumber.
If desired, you can add some red cabbage.
