Chop the onion, slice the green beans, peel the carrot and grate using the large holes side of the grater. If you have time, cut it into long thin strips.
Heat a deep pan over medium-high heat.
While heating, cut the meat into strips and season with salt and pepper.
Once heated, add half of the oil, spread and add the beef.
Sear the beef until browned on all sides. This will take approximately 3-4 minutes.
Once the beef is seared, remove and add the rest of the oil. Add the onion along with the green beans.
Stir-fry over medium heat for approximately 3-5 minutes.
Then add the grated carrot and season to taste. Continue cooking until desired doneness and remove from heat.
Add the beef and mix well. If you like, you can add chopped parsley.
Serve hot.
