Then heat half the oil in a pan and, once heated, add the egg with its whites. Fried until cooked as desired.
Cut the spinach into thick strips and heat a pan over high heat. Once heated, pour the remaining oil and spread.
Add the spinach with salt and pepper and cover. Let cook over medium-low heat for 4 minutes until its volume is reduced.
Add the sweet potato and mix well. Turn off.
Serve the sweet potato with the spinach, egg and avocado on a plate.
