Chop the cauliflower florets, onion and garlic. Separately, cut the tomato into small pieces.
Heat the oil in a pot over medium-high heat.
Once heated, stir-fry the onion and garlic for 5 minutes.
Next, add the chicken and cook until browned on all sides for about 5 more minutes.
Add the tomato, cauliflower and a little water (2 to 3 tablespoons).
Lower the heat, cover and cook for 10 minutes (if you have more time you can leave between 10-20 minutes on low heat).
1-2 minutes before removing, add the spinach leaves and season to taste.
Serve hot.
