For this recipe you need cooked rice.
Cut the upper part of the bell pepper and remove the seeds. Cook the bottom part and set the upper aside to chop it later.
Then take the bottom part of the bell pepper to the microwave for 7 minutes.
You can also put it in a pan with some water. Cover and let cook for 5-7 minutes over medium heat.
Heat a pan over medium-high heat. In the meantime, chop the garlic and the upper part of the bell pepper.
Once heated, pour the oil and spread. Add the onion with the bell pepper and a pinch of salt.
Stir-fry over medium heat for 5 minutes. Once soft and translucent, add the ground beef.
Cook for 8 minutes until the beef browns.
Add the rice, salt and pepper and mix. Let cook for 2 more minutes and remove.
Fill the bell pepper with the mixture and cover with cheese.
Oven/Air fryer option: Bake for 7 minutes or cook in the air fryer for 5 minutes over 356 °F (180 °C) until the cheese melts.
Without oven/air fryer: Place the cheese on top and wait some minutes until melted.
Sprinkle with chopped parsley and serve. If you have more filling, serve as well.
