Cut the beef into small pieces. chop the garlic with the tomato and slice the onion.
Heat a pan over high heat. Once heated, pour half the oil, spread and put the onion with a pinch of salt.
Stir-fry for 3 minutes over medium heat and put the beef. Mix well, cook for 8-10 minutes while stirring from time to time and turn off.
Heat the remaining oil in another pot and, once heated, put the garlic with the tomato and a pinch of salt.
Stir-fry for 3-5 minutes until the tomato releases its juice and add the rice. Let cook for some minutes for a better flavor and then add 2 parts of water per each of rice.
Add salt and pepper, mix and, once boiling, cover.
Let cook for 17-20 minutes while stirring from time to time until the water evaporates and obtaining a rice with sauce serving.
Serve the tortillas, rice and beef with the onion on a plate and sprinkle chopped cilantro.
