Instructions
Grate the tomato. Peel and cut the carrot into very small pieces.
Chop the onion, garlic and parsley.
Remove the skin from the squid and open on one side to clean both inside and out.
Cut into small pieces all removed from the squid and set aside.
Place the ground beef in a bowl and mix with the parts set aside of the squid. Add the chopped parsley and season with salt and pepper.
Add the beaten egg and mix well.
Fill the squid with the mixture and seal with toothpicks.
Heat olive oil in a pan and when heated add the squid and fry.
Once it starts browning, add the carrot, cook for 5 minutes and then add the garlic and onion.
Add the grated tomato, season with salt and pepper to taste. Lower the heat.
Add a little wine and wait for the alcohol to evaporate. Next, add a little water.
Cover and slightly increase the heat. Wait a few minutes for the stuffed squid to be ready to serve.
