Bake them or cook them in the air fryer until soft, for about 20-25 minutes.
At the same time, chop the scallion and dice the tomato. Heat a pan over high heat.
Once heated, pour the oil, add the beef and cook for 8 minutes. Add salt and pepper and stir from time to time.
Once the beef is cooked, add the tomato, salt and pepper to taste. Let cook for some more minutes so the flavors are integrated.
Once the sweet potato is ready, remove the inner part and fill with the mixture. Add scallion on top and season to taste.
