Instructions
Boil the pasta in salted water according to the indicated time on the package. Remove and drain.
In the meantime, add salt and pepper. Preferably use lean meat.
Heat a pan over high heat. In the meantime, chop the garlic and slice the mushrooms.
Once heated, pour half the oil and sear all the sides of the beef for about 4 minutes. Remove.
Next, remove the beef and add the garlic and mushrooms. Add salt and pepper, stir and stir-fry for 3 minutes.
Cover, lower the heat to minimum and cook for 3 more minutes. If necessary, add some water or broth to prevent from getting dry. Add the beef again.
For the spinach sauce: cut the onion into thin strips. Then, heat a pan over medium heat and, once heated, add the remaining oil.
Add the onion with a pinch of salt and stir-fry for 5 minutes until translucent. Next, add the spinach, stir, cover and let cook for some minutes.
In the meantime, dilute the cornstarch in milk, season with nutmeg and a pinch of salt.
Add the mixture into the pan, stir. Cover and leave for a few minutes until thickened.
Add the cooked pasta, mix and turn off the heat.
In a plate serve the beef with mushrooms in its sauce and the pasta in spinach sauce. Optional: Sprinkle with toasted walnut pieces.
