Peel and slice/dice the sweet potato. Put the potato in a pot with boiling water. Let boil for 8-10 minutes, remove and drain.
Four or three minutes before removing, add the broccoli previously cut into small florets. Remove.
In the meantime, chop the garlic, cut the onion into thin sticks, cut the tomato into thick strips and dice the chicken. Set aside.
Heat a wok or pan over high heat. In the meantime, dice the chicken and add salt and pepper.
Once heated, pour the oil, spread and add the chicken. Cook for 3 minutes until all the sides are seared.
Add the onion, garlic, tomato and ginger. Let stir-fry for some minutes until the onion is translucent.
Add the soy sauce, broccoli and mix.
Serve the sauté with the cooked sweet potato.
