Instructions
First, clean and slice the mushrooms. Next, chop the garlic and cut the chicken into small pieces.
Heat half the oil in a pan over medium heat. Add the garlic and mushrooms and let brown while stirring from time to time.
After 5 minutes, add the chicken and season with salt and pepper to taste.
Let cook for 10 minutes or until the chicken changes its colour. Remove from heat and set aside.
Crack the eggs into a bowl and add a pinch of salt and pepper. Beat.
Preheat the same pan with the remaining oil and spread.
Once heated, pour the beaten eggs. Cover and cook until the white sets a bit, for about 4 minutes. Then flip using a spatula.
Add the chicken and mushroom mixture on top so it gets heated.
Lower the heat, let cook for 1-2 more minutes, remove and serve by folding the omelet in half. You can serve with some arugula.
