Dice the chicken breast. Set aside.
Chop the garlic together with the ginger. Separately, slice the leek and carrot into thin strips. Set aside.
Place a pot filled with water over high heat until boiling.
Once boiling, place the noodles and boil following the instructions on the package. Remove and set aside.
Place a pan over medium heat and pour half of the sesame oil.
Once heated, sear the chicken breast for 3 to 4 minutes per side or until browned. Remove and set aside.
In the same pan, pour the remaining oil and stir-fry the leek along with the carrot, garlic and onion for 4 minutes over medium-low heat.
Add the chicken, noodles and soy sauce. Mix together.
Season to taste and serve. If you wish, you can garnish with chopped parsley.
