Chop the onion together with the garlic and tomato. Meanwhile, cut the chicken breast into bite-size pieces.
Preheat a pan with the oil over medium heat.
Once heated, add the onion, garlic and tomato with a pinch of salt. Stir-fry for 3-5 minutes.
Then add the curry, turmeric, salt and pepper to taste. Stir and add the vegetables.
Add the chicken breast, turn up the heat and cook until browned on the outside, approximately 8-10 minutes.
Add the rice and double the amount of broth. Turn up the heat and cook until the liquid is slightly reduced, approximately 15 minutes.
Once ready, remove from heat and serve. Optional: Top with cilantro.
