Instructions
Peel the potato, dice and place in a pot of boiling water for 10-12 minutes. Remove and set aside.
Separately, heat half of the oil in a pot over high heat. Cut the chicken into bite-size pieces and season with salt and pepper.
Once heated, add the chicken and brown on both sides. This will take 3-4 minutes.
Meanwhile, chop the scallion and garlic and cut the mushrooms, zucchini and tomato into pieces.
When the chicken is browned, lower the heat to medium and add the rest of the oil.
Add the garlic with the mushrooms and stir-fry together with the chicken breast for 4 minutes.
Then add the zucchini, tomato and scallion. Leave for 4 more minutes.
Add the potatoes, mix well and season to taste. Remove from heat.
Serve hot.
