For this recipe you need cooked rice.
Place a pan over medium heat. While heating, chop the garlic and the onion.
Once heated, pour the oil, spread and add the onion with a pinch of salt. Stir-fry for 5 minutes over medium heat.
Cut the chicken breast into bite-size pieces, season with salt and pepper and add to the pan with the garlic.
Cook stirring until browned on all sides. This will take approximately 5-6 minutes.
Then add the orange juice, soy sauce and, optionally, a pinch of stevia.
Cover and cook over low heat for 8-10 minutes.
Remove from heat and serve with the white rice, sprinkle with chopped scallions.
