Instructions
Boil the pasta in salted water according to the indicated time on the package. Once ready, remove and drain.
Make a cross cut at the top of the tomato of only a finger deep.
Put the tomato in a pot with boiling water and let boil for 5 minutes. Next, remove, drain and blend. Set aside.
Heat a big pan over high heat. In the meantime, add salt and pepper to the pork and cut into bites.
Once heated, add half the oil and the pork. Sear each side for about 2 minutes over medium heat, remove and set aside.
Chop the onion and slice the mushrooms.
On the same pan, add the remaining oil with the onion and a pinch of salt. Stir-fry for 5 minutes over medium heat.
Add the mushrooms, the tomato sauce and salt and pepper. Optional: Add a pinch of paprika.
Once boiling, add the pork again and continue cooking with the sauce. If necessary, add some water or broth.
Cover, lower the heat and cook for 5-8 more minutes.
Serve the pasta with the pork and the mushroom sauce. Optional: Garnish with chopped scallion.
