Pour in the beaten eggs and cook for 2-3 minutes until the egg sets. Flip with a spatula to cook for 1 more minute. Remove.
Simultaneously, chop the onion and heat the remaining oil in another pan or pot.
Stir-fry the onion with a pinch of salt for 5 minutes over medium heat. Next, add the ground beef, oregano, chopped parsley and stir.
Cook for 8-10 minutes or until the beef browns. Season with salt and pepper and remove from heat.
Place the filling on the egg omelet and roll up.
Once done, cut into thick slices and place on a plate.
Serve with diced or sliced tomato. Season with lemon, salt and pepper to taste.
