For this recipe you need cooked rice.
Season the beef, previously cut into thin pieces, with 1/3 of the sesame oil, soy sauce and sugar.
If you wish, you can add Chinese spices. Let stand for 15 minutes.
Chop the scallions (white and green part) and the bell pepper. Beat the egg in a bowl. Set aside.
Heat a non-stick pan, add the egg and once the bottom is set, flip over.
Let the egg cook for one minute and turn off. Cut into small pieces.
Heat 1/3 of the oil over medium heat and sear the beef for 2 to 3 minutes per side.
Cover and cook for 5 minutes over low heat. Add water if required.
Next, remove the beef and cut into small pieces.
Place a wok over high heat and once heated, pour the remaining oil.
Add the scallions (white part) and the bell pepper. Stir-fry for one minute over medium-low heat.
Add the rice, the beef with its juice, the egg and stir.
Add the remaining onion and mix.
Season to taste and serve.
