For this recipe you need cooked rice.
Season the chicken, previously cut into thin pieces, with 1/3 of the sesame oil, soy sauce and sugar.
If you wish, you can add Chinese spices. Let stand for 15 minutes.
Chop the scallion (white and green part) and the bell pepper. Beat the egg in a bowl and set aside.
Heat a non-stick pan, add the egg and once the bottom is set, flip it over.
Let the egg cook for one minute and turn off. Cut into small pieces.
Heat 1/3 of the oil over medium heat and sear the chicken for 2 to 3 minutes per side.
Cover and cook for 5 minutes over low heat. Add water if required.
Next, turn off, remove the chicken and cut into small pieces.
Place a wok over high heat and once heated, pour the remaining oil.
Add the scallion (white part) and the bell pepper. Stir-fry for one minute over medium-low heat.
Add the rice, the chicken with its juice, the egg and stir.
Add the remaining onion and mix.
Season to taste and serve.
