For this recipe you need cooked rice.
Season the pork with 1/3 of the sesame oil, soy sauce and sugar.
If you wish, you can add Chinese spices and red dye. Let stand for 15 minutes.
Chop the scallions (white and green part), beat the egg in a bowl and set aside.
Heat a non-stick frying pan, add the egg and once the bottom is set, flip over.
Let the egg cook for one minute and turn off. Cut into small pieces.
Heat 1/3 of the oil over medium heat and sear the pork for 2 to 3 minutes per side.
Cover and cook for 5 minutes over low heat. Add water if required.
Next, turn off, remove the pork and cut into small pieces.
Place a wok over high heat and once heated, pour the remaining oil.
Add the scallions (white part) and stir-fry for one minute over medium-low heat.
Add the rice, the pork with its juice, the egg and stir.
Add the remaining onion and mix.
Season to taste and serve.
