For this recipe you need cooked rice and cleaned shrimp tails.
Season the shrimp with 1/3 of the sesame oil, soy sauce and sugar. Let stand for 15 minutes.
Chop the Chinese onion (white and green part), beat the egg in a bowl and set aside.
Heat a non-stick pan, add the egg and once the bottom is set, flip over.
Let the egg cook for one minute and turn off. Cut into small pieces.
Heat 1/3 of the oil over medium heat and sear the shrimp for 2 to 3 minutes per side.
Cover and cook for 5 minutes over low heat. Add water if required.
Next, turn off, remove the shrimp and cut into small pieces.
Place a wok over high heat and once heated, pour the remaining oil.
Add the Chinese onion (white part) and stir-fry for one minute over medium-low heat.
Add the rice, the shrimp with its juice, the egg and stir.
Add the remaining onion and mix.
Season to taste and serve.
