Instructions
Peel and dice the potato. Boil for 10-12 minutes or until soft.
While heating the pan over medium-high heat, season the pork with salt and pepper and chop the onion.
Once heated, add half of the oil and add the pork. Sear for 4-5 minutes per side. Set aside.
While the pork is searing, make the marinade: In a bowl mix mustard, honey, soy sauce and minced garlic. You can add 1 teaspoon of teriyaki sauce and/or ginger.
Brush the pork with the marinade and cook over low heat.
In another pan, heat the remaining oil, onion, a pinch of salt and stir-fry for a few minutes.
If you wish, you can add Chinese spices or, add a little of the sauce in case there is some remaining.
Once the potatoes are softened, remove, drain and mash. Add milk, butter, salt and pepper to taste and mix.
