Boil the pasta in water with a little salt following the time indicated on the package. Once done, remove and drain.
Separately, heat half of the oil in a pan over medium-high heat. Add salt and pepper to the chicken.
Once heated, add the chicken and cook for 4-6 minutes per side over medium heat. Once done, remove and set aside.

Stir-fry for 4-5 minutes and stir occasionally. Cook until tender.
Lastly, add the spinach, cover and let cook for a few minutes until it reduces in volume.
Mix the mushrooms with the pasta and serve with the chicken.
