Peel and dice the potato. Boil for 10-12 minutes or until soft.
Peel and cut the carrot into strips. Boil in a another pot with a pinch of salt for 6 minutes. Drain.
At the same time, heat the grill over high heat and season the pork with salt and pepper.
Once heated, pour the oil and add the pork. Brown both sides for 4-6 minutes over medium heat.
Then lower the heat, cover and continue cooking for 5-10 minutes or until well cooked. Set aside.
At that point, add the boiled carrot to the grill and cook until brown. This will take about 4-5 minutes and set aside.
Remove the pork and slice. You can add a herb you may like, such as rosemary, thyme, oregano, etc.
For the mashed potatoes, place the cooked potato in a bowl and mash until the potatoes reach your desired consistency.
Mix with the butter and milk until creamy. Season with salt and pepper.
Serve the pork with grilled carrot and mashed potatoes.
