For this recipe we need water, 4 times the amount of cornstarch. Set aside 1 tablespoon of the water for the sauce and half a tablespoon to season the chicken.
Also, you can use garlic powder, paste or minced to taste.
Dice the chicken breast and place in a bowl.
Season the chicken with a pinch of salt, ground garlic, pepper and the water set aside at the beginning. Refrigerate for 30 minutes.
Meanwhile, prepare the sauce: Mix the sugar, water and stir. Add the honey and mix again until well combined.
Separately, prepare the tempura: Mix the egg yolk with the remaining water and stir. Add a pinch of salt and stir.
If you have baking powder, add the same amount of garlic and mix. Add the cornstarch, mix. Add the flour and mix until all the ingredients are combined.
Pour 1/3 of the oil to the previous mixture and mix again until you have a smooth and shiny texture.
Once the chicken is done, add it to the tempura and mix.
Heat the remaining oil in a pan. Once heated, fry the chicken. Cook for 3 to 4 minutes per side and remove.
Place a pan over medium heat and add the sauce previously mixed. Once boiling, turn off, add the chicken and mix.
Serve the cooked rice on a plate and place the chicken on top. Garnish with sesame seeds and, if you have scallions, sprinkle.
