Heat water in a pot over high heat. In the meantime, marinate the chicken.
Marinate the chicken with the soy sauce, garlic, chopped ginger (or ground), cilantro leaves, salt and pepper to taste.
Let marinate for 5-10 minutes or skip this step if you don't have the time.
Wash, peel and cut the cassava into pieces. Put in a pot with boiling water and let boil for 15-20 minutes.
Once ready, remove and drain. Heat half the oil in a pan, add the cassava and cook each side for 1-2 minutes over medium heat until browned.
At the same time, heat a pan over medium heat and once heated, pour the oil, spread and add the chicken.
Let cook each side for 4-6 minutes and once you flip it, cover. Turn off.
Serve the marinated chicken with the brown cassava.
You can add a fresh salad seasoned with lemon juice, salt and pepper.
