Chop the garlic and grate the ginger. Place in a bowl with the soy sauce and a little water. Season with salt and pepper, mix and set aside.
Heat the oil in a pan over high heat. While heating, cut the chicken into strips and season with salt and pepper.
Once heated, add the chicken and sauté over medium heat for 3-4 minutes until the sides are seared.
Meanwhile, peel the carrot and cut into strips along with the bell pepper. You can use green and/or red ones.
When the chicken is browned, lower to medium heat and add the vegetables along with the sauce.
Season with salt and pepper and stir-fry together with the chicken breast for 5 - 7 minutes. Remove once done.
Serve the chicken stir-fry with bell peppers.
