Instructions
Make a cross-shaped cut at the top of the tomato of approximately one finger deep.
Place the tomato in a pot with boiling water and boil for 5 minutes. Next, remove and blend. Set aside.
Separately, in a bowl mix the ground beef with the minced garlic and breadcrumbs. Season to taste with salt and pepper and add, optionally, chopped parsley.
Mix well and shape into meatballs. Refrigerate.
Place a pan over high heat. While heating, chop the onion and garlic.
Once heated, pour half of the oil and add the meatballs. Cook over medium heat for about 5 minutes or until browned. Remove and set aside.
In the same pan used, add the remaining oil and stir-fry the onion and garlic with a pinch of salt for 5 minutes or until translucent.
Then add the blended tomato and season to taste. Once boiling, add the meatballs again.
Crack the egg in the center, lower the heat and cook until it sets for approximately 5-8 minutes.
Remove from heat and serve. Sprinkle with chopped scallion.
