Slice the mushrooms. Separately, place a pan over high heat and once heated, add half of the oil and spread.
Place the mushrooms on the grill and cook for 2 minutes per side over medium-low heat.
Beat the eggs and then add the milk, salt and pepper to taste. Mix together.
Heat a pan over medium heat. Once heated, add the rest of the oil and spread.
Then add the beaten eggs and cook over low heat.
Add the grated cheese to half of the omelet along with the grilled mushrooms and use a spatula to fold the other half of the omelet so that it looks like a taco.
You can use fresh/white or mozzarella cheese.
Then cover for a minute and serve.
