Instructions
For this recipe you need cooked rice. Also, you can use two peppers of different colors or just one color.
Cut the pork loin into bite size pieces and place in a bowl.
Cut the onion into strips, chop the garlic and add to the bowl with the pork.
Add thyme, marjoram, olive oil, lemon juice and mix. You can add cumin and/or lemon juice (half of the amount of tomato sauce) if you have available.
Place a pan over high heat. Once heated, pour in the oil and add the previous mixture.
Cook over medium heat until the pork is done for approximately 10 - 12 minutes.
Chop the peppers and slice the olives. Set aside. Optional: Add jalapeno.
Mix the rice with the tomato sauce until well combined.
Add the peppers, olives and pork. Mix and serve hot.
