Instructions
For this recipe you need both the white and green part of the scallion.
Chop the garlic, ginger and onions. Separately, cut the pork in two parts, dice one and slice the other one. Set aside.
Place a pan over medium heat and pour half of the sesame oil.
Once heated, sear the pork over medium heat for approximately 4 minutes per side or until browned.
Cover and cook for 4 more minutes. Turn off and set aside.
Mix the sugar with the vinegar and a pinch of salt. Set aside.
Place a wok or pan over medium heat and pour in the remaining oil.
Once heated, stir-fry half of the scallions for 5 minutes over medium-low heat.
Next, add the garlic and ginger. Mix and add the rice.
Add the soy sauce, the vinegar-sugar mixture and stir.
Add the diced pork and mix.
Season to taste and serve. Garnish with sliced pork and scallions (green part).
