Instructions
First, season the pork with the oyster sauce and vinegar. Let it rest for 15 minutes.
Next, chop the carrot, scallion (one half of the white part and the other half of the green part) and garlic. Grate the ginger and set aside.
Place a pan over high heat. Once heated, add half of the oil, lower the heat to medium and sear the pork. Cook for 2 to 3 minutes per side.
Cover and cook for 5 minutes over medium-low heat. Turn off and set aside.
Place a wok over high heat. Once heated, add half of the oil, reduce heat to medium and sear the pork for 2 to 3 minutes per side. Remove and set aside.
In a wok, add the remaining oil and stir-fry the ginger, garlic, scallion (white part) and carrot.
Add the previously cooked rice, the remaining scallion and the soy sauce. Mix well.
Season to taste and serve hot. Serve with the pork.
If you want a spicy touch, add chopped red chili pepper to the pork and rice.
