    First, season the pork with the oyster sauce and vinegar. Let it rest for 15 minutes.

    Next, chop the carrot, scallion (one half of the white part and the other half of the green part) and garlic. Grate the ginger and set aside.

    Place a pan over high heat. Once heated, add half of the oil, lower the heat to medium and sear the pork. Cook for 2 to 3 minutes per side.
