For this recipe use lean pork cuts.
Boil the pasta in water with a little salt according to the time indicated on the package. Remove and drain.
Place a pot over high heat. While heating, season the pork to taste with salt and pepper and cut into bite size pieces.
Once heated, pour half of the oil and add the pork. Cook for 4 minutes per side. Remove and set aside.
Meanwhile, chop the onion, garlic and tomato.
Heat the remaining oil in the same pan and add the previously chopped vegetables. Season with salt and pepper and stir-fry for 5-7 minutes over medium heat.
Season with paprika powder and add the pork and bay leaves. Stir, cover and cook for 10-15 minutes over medium-low heat.
Serve the pork with tomato and the cooked pasta on a plate.
