Instructions
Boil the pasta in water with a little salt following the time indicated on the package. Once done, remove and drain.
Clean the pork and cut into very small pieces. You can use the food processor but make sure it is not too finely chopped.
Meanwhile, peel the other garlic and make a cross cut at the top of the tomato of about a finger deep.
Place the tomato and garlic in a pot with boiling water and boil for 5 minutes. Next, remove, drain and blend. Set aside.
Chop the onion and parsley. Peel and dice the carrot.
Place a pan over medium heat and once heated, pour the oil and spread it.
Add the pork, onion and salt and pepper. Stir-fry for about 5 minutes and add the carrot.
After 4-5 minutes, add the blended tomato sauce and the chopped parsley.
Leave over medium heat for about 5-7 minutes. Season with salt and pepper to taste. You can season with a pinch of oregano.
Serve the pasta on a plate and mix with the tomato sauce and pork.
