For this recipe you need a lean cut of pork.
Place the corn in a pot of boiling water for 12-15 minutes. Next, remove, drain and set aside.
Separately, place a pan over high heat. While heating, season the pork with salt and pepper.
Once heated, pour half of the oil and add the pork. Brown on both sides for 4 minutes over medium heat.
Cover, lower the heat to medium-low and let cook for 10 minutes.
Simultaneously, place another pan over high heat. While heating, chop the bell pepper, onion and parsley.
Add the rest of the oil and add the onion, bell pepper and a pinch of salt. Stir-fry for 5-7 minutes over medium heat.
Next, add the corn and parsley. Stir and turn off.
If you wish, you can add a little red bell pepper.
Slice the pork and serve with the corn, onion and bell pepper.
