For this recipe you need cooked rice.
Place a small pot filled with water over high heat until boiling.
Add the diced carrot and boil for 6 minutes. Remove and set aside.
Meanwhile, chop the onion and garlic. Cut the pork into pieces.
Heat half of the oil in a pot over medium heat.
Once heated, sear the pork pieces for 2 to 3 minutes per side or until browned. Cover and cook for 10 minutes over medium-low heat.
Place a pan over medium heat and pour in the remaining oil.
Once heated, stir-fry the onion over medium-low heat for 7 minutes or until translucent.
Add the garlic, turmeric, carrot and mix. Stir in the rice, season with salt and pepper and mix again.
Serve the rice on a plate with the pork and garnish with parsley.
