Instructions
Wash, peel and dice the potato. You can also use small potatoes with peel. Remember to wash well.
Boil in salted water for 10-12 minutes until soft. Remove and drain well.
Cut the ham into pieces and chop the parsley.
In a bowl place the eggs, garlic paste or powder, potato, ham and parsley. Season with salt and pepper and mix well.
Place a pan over high heat. Once heated, pour the oil, spread and add the mixture.
Cook over medium heat for 4-5 minutes with the pan covered.
When the egg has set, remove the base a little with a spatula and flip the omelet with the help of a lid or large plate.
Cook for about 4 more minutes until browned and remove from the heat. Serve.
You can also cook it in the oven (or air fryer): Spread the oil in an oven-proof container and place the mixture.
Bake at 392 °F (200 °C) for about 20 minutes or until browned.
