For this recipe you need cooked rice.
Shell the corn and put the grains in a pot with boiling water. Let boil for 12-15 minutes.
Peel the carrot and dice. Add the corn cooking water 6 minutes before finishing.
Remove and drain all together. Set aside.
At the same time, heat half the oil in a pot over medium heat. In the meantime, cut the chicken into bites and add salt and pepper.
Once heated, add the chicken and saute for 6-8 minutes until browned outside and cooked inside.
Add the scallion, rice, corn and carrot. Stir for 1 minute and remove from heat.
