Clean the shrimp, remove the tail and the black line. Cut the shrimp in halves or thirds.
Place a pan over high heat. Once heated, pour the oil, spread and add the shrimp.
Brown 2 minutes per side and season with salt and pepper. Turn off and set aside.
Meanwhile, cut the tomatoes, cucumber and celery into medium pieces.
Remove the avocado peel and dice.
For the dressing: Mix the yogurt (plain and unsweetened), mustard, lemon juice and salt and pepper to taste.
You can replace the plain yogurt with fresh milk.
Mix the shrimp and the chopped vegetables with the dressing.
Serve the previous mixture on top of the lettuce. You can sprinkle parsley if desired.
