Once boiling, add the sweet potato. Let boil for 8-10 minutes until soft.
Once soft, remove and drain. Brown each side of the sweet potato on the heated oil for about 2 minutes.
For the dressing, mix the lemon juice with the mustard, stevia, salt and pepper.
Put the spinach leaves, sweet potato, shredded cheese and pieces of walnuts on a plate.
You can use white/fresh, mozzarella, cottage or ricotta cheese.
Pour the sweet dressing, mix and serve.
