Instructions
Boil the pasta in salted water according to the indicated time on the package. Once ready, remove and drain.
In the meantime, chop the scallion, garlic, leek and red bell pepper.
Heat oil in a pan over medium heat.
Once heated, add the vegetables (except the scallion) and stir-fry for 5-6 minutes while stirring occasionally.
Peel the shrimps, remove the black line and also the tail and clean.
Once the vegetables are soft, add the shrimps and scallion.
Stir-fry the vegetables for 3-4 minutes, depending on the size.
Add the soy sauce, ground ginger and salt and pepper to taste.
Once the shrimps have both sides brown, add the cooked pasta. Mix well and remove from heat.
Serve the pasta hot.
