Peel the shrimps, remove the black line at the back and also remove the tail and clean.

Stir-fry for 5-7 minutes until the onion gets translucent.
Then add the zucchini and cook for 5 more minutes.
For the sauce: In a small pot, mix the vinegar (white or rice), stevia, paprika, soy sauce, salt to taste and water (four times the soy sauce amount).
Let boil for 3 minutes. In the meantime, dissolve the cornstarch in some water.
Add the cornstarch mixture gently while you stir constantly. Remove from heat once you achieve your desired texture.
Once the vegetables are soft, add the shrimps and the sauce. Let cook for 1-2 minutes for better flavor.
Season to taste and serve hot.
