Heat half of the oil in a pot over high heat. While heating, cut the turkey into strips and season with salt and pepper.
Once heated, add the turkey breast and brown on both sides. This will take 3-4 minutes.
Separately, cut the onion and bell pepper into thin strips.
When the turkey is browned, lower the heat to medium and add the rest of the oil.
Add the vegetables and stir-fry together with the turkey breast for 5-7 minutes.
Salt and pepper to taste and stir occasionally. Add some water if necessary to prevent it from drying out.
If desired, season with a few drops of lemon juice.
When desired doneness is reached, remove.
In a bowl serve the stir-fried turkey with white rice. Add fresh cilantro.
