Peel and dice the potato. Boil for 10-12 minutes or until soft.
Simultaneously, place the peas in a pot with boiling water for 6 minutes. Once done, remove and drain.
Clean the chicken breast and chop or use the food processor.
Mix the chicken with the previously chopped garlic, parsley and half of the breadcrumbs.
Season with salt and pepper, shape into a patty and place cheese in the center. Seal, shape and dip the chicken in the remaining breadcrumbs.
Place a pan over high heat. Once heated, pour in the oil, add the stuffed chicken and reduce the heat to medium.
Cook for 3-4 minutes on each side or until browned.
Once the potatoes are soft, remove, drain and mash. Add milk, butter, salt and pepper to taste and mix.
Serve the breaded chicken with mashed potatoes and peas on a plate.
