For this recipe the artichoke hearts need to be previously cooked. You can use fresh or canned.
Boil the pasta in salted water according to the indicated time on the package. Once ready, remove and drain.
In the meantime, heat half the oil in a pan over high heat and add salt and pepper to the chicken.
Once heated, add the chicken and brown both sides. This will take about 5 minutes.
Then lower the heat, season with thyme, cover and continue cooking for 10-15 more minutes. If necessary, add some water to prevent from drying.
Next, chop the onion and cut the mushrooms, bell pepper and artichokes into pieces.
Heat the remaining oil in another pan over medium heat.
Once heated, add the onion with a pinch of salt and stir-fry for 5 minutes.
Then add the artichokes, bell pepper and mushrooms. Add salt and pepper, stir and let cook for 5 more minutes.
Once ready, mix with the stir-fried chicken and season with salt to taste.
Serve the pasta with the thyme chicken, artichokes and olives on a plate.
