Cut the upper part of the bell pepper and remove the seeds.
Take the bell pepper to the microwave for 7 minutes or the oven/air fryer for 8 minutes over 356 °F (180 °C)
You can also put in a pan with some water. Cover and let cook over medium heat for 5-7 minutes.
For the filling: heat the oil in a pan over medium heat while you drain and dice the tofu. Chop the garlic.
Once heated, add the garlic with tofu, salt and pepper. Cook for 5 minutes while stirring from time to time.
In the meantime, chop the parsley and grate the carrot. Add to the pan and cook for 2 more minutes.
Add the rice, mix well and let cook for 2 more minutes.
Season to taste and fill the bell pepper with the mixture. Serve.
