Instructions
Put the peas in a pot with boiling water for 6 minutes.
Once blanched, remove and drain.
In the meantime, do some cuts on the tomato skin and put in a microwave safe bowl.
Cut the tomato into small pieces.
Heat oil on a pan over medium heat.
Once heated, add the oil, garlic and tomato with a pinch of salt. Stir-fry for 3-4 while you stir.
Add the basil and bay leaves, and stir. After two minutes, add the peas.
Season with salt and pepper to taste. Optional: You can add black peppercorns.
After 5 minutes, remove and serve hot.
