Slice the zucchini and chop the garlic.
Heat half the oil in a non-stick pan over medium heat.
Brown the garlic for some seconds. Then, add the zucchini slices, salt and pepper and mix well so that they get the garlic flavor.
Cook for 5-8 minutes until the zucchini is soft. Remove and set aside.
Crack the eggs into a bowl and add a pinch of salt and pepper. Beat.
Preheat the same pan with the remaining oil over medium heat. Once heated, pour the beaten eggs.
Put the zucchini slices on top of the omelet (spreaded), cover and cook for about 6-7 minutes.
Set aside and serve.
